豆饼麸皮酱制作方法1.原料配方:豆饼与麸皮的配比为10∶3~4。配法是先在豆饼中洒入占豆饼重量100~110%的50℃温水,拌匀后加入麸皮,再搅拌均匀。堆积2小时后,上锅蒸煮,上气后小火焖3~4小时,出锅过筛;摊晾至37~40℃时接种制曲。2.接种制曲:称取原料重量0.1~0.2%的曲种,与2~4倍重量的蒸过的麸皮混合,充分搅拌,使孢子分散均匀,然后拌入蒸好的原料中。将接种后的料醅放入曲盘,置于28~32℃和85%温度条件下培养。若温度太高,可以通过“揭盘”米调解。当盘面长满菌丝以后,要进行“扣盘”,以便另一面也大量繁殖菌丝。再经过36~48小时培养,即成酱醅。如果菌丝呈白色且具有清香味,说明酱醅品质优良,可以采用无盐发酵制酱;若菌丝灰黑色而有异味,说明曲的质量差,不宜采用无盐发酵制酱。3.固体无盐发酵:将成曲捻碎装入竹筐,在30~40℃条件下堆积升温,当曲温达到的46~48℃时,拌入90~120%煮沸后的温水,保持堆温53℃,加盖保温发酵。可以采用火坑保温,使桶外层和中心温度均达60~65℃,发酵48小时左右。4.制醪及调制:发酵完成的酱醅中,加入数量约为酱醅10~12%的食盐,充分搅拌后,陈化24小时即成为酱。
