α-淀粉酶分子式:分子量:CAS号:性质:又称液化酶或糊精化酶。能使淀粉迅速液化而生成低分子的糊精有淀粉酶。广布于动物(胰液、唾液)、植物、真菌和细菌中。植物提出汁(如麦芽汁)中含有α-淀粉酶和β-淀粉酶,加热至70℃维持15分钟,可使β-淀粉酶失去活力,而余下α-淀粉酶。
