蛋氨酸 分子式C5H11NO2S,分子量149.21。学名甲硫基丁氨酸。天然为L-型,是构成蛋白质的一种组成。白色片状晶体或结晶性粉末。左旋体熔点280~281℃(分解),溶于水,不溶于无水乙醇、乙醚、苯、石油醚和丙酮。消旋体熔点281℃(分解),溶于水、酸和碱的稀溶液,易溶于95%的乙醇,不溶于乙醚。L-型或D-型蛋氨酸均有相同的生物活性。在蛋白质合成中,蛋氨酸是信息核糖核酸“翻译”成蛋白质过程中的第一步。无蛋氨酸的存在,蛋白质生物的合成就无法开始。适用于防治肝脏疾病和砷中毒,也用作食品的添加剂。可用酪朊经水解、精制而成;还可由甲硫醇和丙烯醛加成后再与氰化钠和氯化铵反应,生成a-氨基腈,再经水解得到a-氨基酸。
