β-酪蛋白分子式:CAS号:性质:通常是指由牛乳腺分泌的磷蛋白之一,是酪蛋白中含量仅次于α-酪蛋白的重要组分,它占酪蛋白的22%以上,占奶中总蛋白量25%以上。β-酪蛋白可从市售酪蛋白,在pH值4.4,2℃时有较大溶解度而与α-酪蛋白分离或用电泳法分离制纯晶。它含有209个氨基酸残基,分子中有5个磷酸基。分子量24 000。产品呈白色粉末,水中溶解度:2mg/ml。至今已发现β-酪蛋白有七个变异型,即A1、A2、A3、B、C、D、E。在碱性条件下电泳,泳动速度依次为A1=A2=A3>B>D,E>C;在酸性条件下为:C>B=D>A1=E>A2>A3。在所有牛种中,以A变异型出现频率为最高。如以A2为对照,则A1在67位上由Pro变为His;A3在106位由His变成Gln;B在67、122位由Pro→His,Set→Arg;C在37位由Glu变为Lys,67位由Pro变为His;D在13位Ser变为Lys;E在36位Glu变为Lys。在干酪的生产中,干酪的特有风味与β-酪蛋白的分解有关。此外可作为生化试剂。
