木糖异构酶分子式:CAS号:性质:又称木糖异构酶。一种能将D-木糖、D-葡萄糖、D-核糖等醛糖异构化为相应酮糖的异构酶。许多微生物都能产生此种酶。工业上多采用放线菌中链霉菌、细菌中乳杆菌、芽孢杆菌以及假单胞菌、明串珠菌、诺卡氏菌生产。用于淀粉酶生产,进行葡萄糖异构反应,生产果葡糖浆,以代替蔗糖。
