高桩馒头高桩馒头又名呛面馍馍,由于外形比一般馒头高而得名。高桩馒头是山东临沂地区的传统名食。原料配方:面粉1.5千克栗子粉500克豇豆粉500克老肥75克制作方法:1.将面粉、粟子粉、豇豆粉倒在盆内,加老肥和适量温水和成较硬的面团放在面板上,用单人杠或双人杠不停地压百次左右,揉成直径3.3厘米左右的粗长条、揪成50克一个的小面剂,再把每个小面剂搓成高约10厘米、直径约3.3厘米的生馍坯(顶部要搓成球形、底部成凹形),盖上棉被放在气温暖和的地方稍饧(醒)10分钟,再反复搓揉三次,每揉一次要饧10多分钟。揉时要撒一些干面粉,成镆时才能产生层次。2.在高边笼屉铺上湿布,将馍馍生坯间隔地摆放在屉布上,上锅用大火蒸约20分钟可熟,取下即成。产品特点:色泽白而光洁,组织紧密,有韧性和弹性,质地松软,味道香甜,热吃冷吃均可。
