菊芋菊芋Helianthustuberosus菊科向日葵属多年生宿根植物。又称洋姜。以块茎供食用。原产北美。根系极发达,地下匍匐茎顶端膨大成块茎,梨形或纺锤形,表皮黄色或白色等。块茎最外层为表皮细胞,其内为皮层,由薄壁细胞组成,木质部的薄壁细胞特别发达,为块茎的主要部分。地上茎高达3米,叶长卵形。秋季开花,但结实率低,长江以南可形成种子,生产上一般用块茎繁殖。属短日照植物。人工缩短日照可加速块茎的形成。根系强大,适应性强,可利用荒地栽培。春季播种时一般选较大的整块茎作种,播种一次,可连续收获4~5年。常见的虫害有地老虎、蝼蛄和金针虫等。块茎含淀粉以及菊糖、多缩戊糖等。主要供盐渍用,脆嫩可口,也可炒食,或作制取淀粉和酒精原料。
