酒精发酵分子式:分子量:CAS号:性质:又称乙醇发酵。利用酵母菌分解已糖产生酒精和二氧化碳过程。是曲型的嫌氧发酵。采用糖蜜、木材水解液、亚硫酸纸浆废液等糖质原料,经适当处理后,可直接利用酵母菌进行发酵,使糖变为乙醇和二氧化碳。发酵液中的乙醇可用蒸馏法蒸出,并进行精馏,而获得乙醇含量达95%以上的酒精,同时除去杂醇油和易挥发物质(如醛等)。如用薯、玉蜀黍等淀粉质原料,需先将原料高压蒸煮,冷至60℃,加糖化剂进行糖化,使淀粉变为糖后,再利用酵母菌进行发酵。糖化剂采用固体曲或液体曲。近年来,采用固定化增殖酵母连续发酵生产酒精的技术已实现工业化生产。
