脱乙酰壳多糖分子式:CAS号:性质:又称脱乙酰壳多糖,几丁聚糖,脱乙酰几丁质,聚氨基葡糖。工业上采用虾壳或蟹壳先提得甲壳素,然后用浓碱在一定温度下使甲壳素部分地脱乙酰基,如50%氢氧化钠液,在105℃下浸渍甲壳素3h,约可获得脱去80%乙酰基的壳聚糖,同时甲壳素的糖链也有不同程度断裂。产品呈白色片状物,根据分子量大小可分为三种:(1)分子量约1.5×105,灰分≤2%,黏度(在1%乙酸中,20℃)约100mPa·s,不溶物约1%;(2)分子量约4×105,灰分≤2%,黏度约200mPa·s;(3)分子量6×105,黏度约400mPa·s。都属于低分子量直链型碳水化合物类型的阳离子型聚电解质。溶于1%乙酸溶液、柠檬酸稀溶液、低浓度盐酸(0.15%~1.1%),不溶于磷酸、硫酸。约185℃分解。其链上有较活泼的氨基,故能发生多种化学反应而获得多种功能性衍生物,且对含氢键的化合物有较好的亲和性,也能吸附或络合各种离子团。在食品工业上是一种天然、无毒的保鲜剂、絮凝剂。且可吸附水中镉、汞、铜等重金属离子。壳聚糖本身也是一种功能性食品或可与其他食品配伍使用。
