焦谷氨酸分子式：CAS号：性质：谷氨酸(Glu)分子内α碳原子上氨基与自身γ碳原子上羧基失去一个水分子，从而缩合成一个呈环状的化合物。有L-、D-和LD-型。但通常是指L-型，即L-pGlu。熔点155～158℃。旋光度-11°±1°，-10.5°±1°(c=5cm,水)，-11.3°(c=2cm，水)。可由化学合成，或由L-谷氨酸甲酯先溶于甲醇，并通入干燥氨气，反应4h后经纯化制得。主要用作生化试剂。
