单宁酶分子式:CAS号:性质:又称鞣酸酶。一种单宁酰基水解酶,该酶对带有两个苯酚基的酸,如鞣酸具有水解作用。该酶可由霉菌,如黑曲霉、米曲霉生产。可用于处理啤酒中单宁、蛋白质,使其澄清透明,亦可用于除去柿子等食品的涩味,以及用于制造速溶茶,防止发酵茶混浊。
