冷冻干燥  又称升华干燥,将物料冷冻至水的冰点以下,并置于高真空(10~40Pa)的容器中,通过供热使物料中的水分直接从固态冰升华为水汽的一种干燥方法。冷冻干燥操作中使物料处于冰冻状态,物料内部结构可以保持不变,所以特别适用于处理凝胶物料。一般干燥方法的干燥温度需在冰与物料的共融点之上,干燥后产品将失去原有凝胶性质。又如用一般的真空干燥法处理含盐的生物制品时,表层会形成盐壳;而用冷冻干燥法可以避免发生这种现象。冷冻干燥也适用于处理热敏性和易氧化的物料,如抗菌素、生物制剂等。蔬菜、水果、鲜鱼、肉类等食品经冷冻干燥后,不仅可以久藏,而且能保持原来的多孔结构,吸收水分后可以恢复原有的色香味。    冷冻干燥的供热速率应当使冰以足够的速率升华,同时又不使物料的温度升高到熔点。实验表明,只有在除去了95%以上的水分之后,才允许物料温度升高到室温。冷冻干燥所用的载热体,是常温或温度稍高的任何液体或气体。冷冻干燥器(见彩图)往往不需保温,有时甚至以导热性较好的材料制造,以充分利用外界热量。
