嗜热酯肪芽孢杆菌分子式:CAS号:性质:一种能在65℃高温下生长、革兰氏阳性芽孢杆菌。细胞宽1.0μm。芽孢椭圆形,常引起细胞膨大。多数菌株能在葡萄糖培养基中厌氧生长,产生L-乳酸等。对叠氮化合物敏感,不耐酸。芽孢有很强的耐热性,常作为检测高压灭菌效率的指示菌。在罐头食品中生长会引起“平酸”现象(产酸而不使罐体膨胀)。广泛分布于各种土壤中。是生产多种耐热酶的潜在菌种。芽孢高度耐热,可用于检验高压热灭菌的效果。有时也会引起罐头食品的腐败。
