抗冻蛋白分子式:CAS号:性质:一类具有提高生物抗冻能力的蛋白质类化合物的总称。最初是从南极与北极地区的海洋鱼类血清中发现一种能与冰晶相结合的特异性蛋白质,它能阻止体液内冰核的形成与生长,维持体液的非冰冻状态。在这些地区生活的鱼类全都具有合成这类蛋白的能力,以适应低温的生活条件。研究最多的可能是生活在南极洋面的Perchlike notothenioids的体内抗冻蛋白,发现这一蛋白基因与鱼的胰蛋白酶原基因中90%以上的核苷酸碱基序列相同或许说明这两者有相近的进化关系。近年来相继在昆虫、植物(如冬黑麦、沙冬青、唐古特红景天叶等)体内也发现有类似功能的抗冻蛋白。至今鱼类的AFP基因的转化植物已获成功;与植物中类似AFP基因在微生物体内克隆也获得成功。推测植物抗冻分子生物学和培植农业上抗冻新品种的前景必定是光明的。
