虾青素分子式:CAS号:性质:又称虾黄素,酮类胡萝卜素(kefo-carotenoids)或虾青素。一种类胡萝卜素属的天然色素。化学组成为3,3′二羟基-β,β′胡萝卜素-4,4′二酮。主要源于蟹、虾等甲壳类水产动物。以酯类或色朊存在。甲壳中与蛋白质结合呈青色。加热分解。氧化后成虾红素(astacin)乃呈红色。虾黄质在吡啶水溶液中为带有金属光泽的紫色片状体。从天然原料制取的虾黄质主要用作养殖鲑鱼的饲料。
