根霉属分子式:CAS号:性质:接合菌亚门、接合菌纲、毛霉目、毛霉科真菌中的一个大属。菌丝无隔、多核、分枝状,有匍匐菌丝和假根,借此可在基物表面广泛蔓延,不产生定形菌落。在假根的上方长出一至数根孢囊梗,顶端长球形孢子囊。囊的基部有囊托,中间有球形或近球形囊轴。囊内产大量孢囊孢子,成熟后孢囊壁消解或破裂,释放球形或卵形等孢囊孢子。有时在匍匐菌丝上产生横隔,随即形成厚垣孢子。有性生殖时由不同性别的菌丝或匍匐菌丝上生出配子囊,配子囊双双异宗配合形成一接合孢子。广泛分布于酒曲、植物残体、腐败有机物、动物粪便和土壤中。有重要工业应用,如米根霉(R. oryzae)的淀粉酶可用于制曲、酿酒,华根霉(R. chinensis)、少根根霉(R. arrhizus)等可产乳酸,匐枝根霉(R. stolonifer, 旧称黑根霉)等还能转化甾族化合物。也应用于甾体激素、延胡索酸和酶制剂的生产。有些根霉会引起甘薯、瓜果或蔬菜霉烂。
