活性干酵母分子式:分子量:CAS号:性质:是由特殊培养的鲜酵母经压榨干燥脱水后仍保持强的发酵能力的干酵母制品。将压榨酵母挤压成细条状或小球状,利用低湿度的循环空气经流化床连续干燥,使最终发酵水分达8%左右,并保持酵母的发酵能力。应用于制备活性干酵母细胞要求蛋白质含量控制在40%~45%,而碳水化合物尤其是海藻糖含量要高。70年代以来,采用遗传工程以及现代的干燥技术,制成即发活性干酵母(instantactive dry yeast)又称高活性干酵母,与活性干酵母相比,含水分4%~6%,颗粒小,发酵速度快,使用时不需预先水化,可直接使用。目前的产品大多为活性干酵母,种类有面包、酒精、葡萄酒用的活性干酵母。
