L-苹果酸分子式  HOOCCH(OH)CH2COOH CAS号  617-48-1  性质  苹果酸在正常情况下稳定,湿度高时有吸湿性。易溶于甲醇、乙醇、丙酮和其他许多极性溶剂。酸性较强,其0.001%水溶液pH值为3.80,0.01%者pH值为2.80,1%者pH值为2.35。离解常数k1为4E-4,k2为9E-6。三斜晶系白色晶体。相对密度1.601(20/4℃)。摩尔燃烧热1.340mJ/mol(293℃)。摩尔溶解热-20.516kJ/mol。粘度(SO2水溶液,25℃)6.5mPa·s。苹果酸有旋光性,其左旋体广泛存在于自然界,是苹果的主要酸组分。右旋体为一种化学实验品。外消旋体广泛用作食品酸化剂,用合成法制得的苹果酸是外消旋体。熔点:d-苹果酸98~99℃;l-苹果酸100~103℃,dl-苹果酸约130℃。加热至180℃时分解。dl-苹果酸在水中的溶解度5℃时为48g/100g、25℃时58g/100g、75℃时80g/100g,在乙醇中25℃时为39.15g/100g,在乙醚中25℃时为1.41g/100g。苹果酸能进行许多二元酸、一元醇和羟基羧酸的特征性反应,生成酯、酰胺和酰氯。   用途  用于食品工业作酸化剂(饮料,硬糖),生产医药和化妆品,用作螯合剂(金属清洁剂)和缓冲剂、纺织工业用阻凝剂、有机合成原料。    毒性   安全、元毒。  包装储运  小包装(23kg)可用多层纸袋包装,大包装用纤维板桶装。50%工业级苹果酸溶液可用槽车运输,贮存中应避免高温、高湿度,以免结块。
