丁酸丁酸butyricacid分子中含有4个碳原子的饱和羧酸。分子式CH3（CH2）2COOH。有两种同分异构体，即直链的丁酸CH3CH2CH2COOH和支链的异丁酸（CH3）2CHCOOH。常以酯的形式或游离状态存在于自然界中，例如丁酸的甘油酯存在于奶油中，所以丁酸又称酪酸；丁酸丁酯存在于桉树中；己酯存在于白芷中；辛酯存在于防风草中；游离的丁酸存在于动物的汗液和粪便中。无色液体，具有刺激性臭味。熔点－4.5℃，沸点165.5℃，相对密度0.9577（20／4℃）。易溶于水、乙醇、乙醚和其他常用的有机溶剂。与水形成二元共沸物，含水量81.4％，沸点99.4℃。淀粉和糖在丁酸菌发酵下可产生丁酸。工业上常利用丁醇或丁醛的催化氧化制备丁酸。实验室中常用乙酰乙酸乙酯或丙二酸二乙酯合成法制取丁酸，丁酸主要用于制造丁酸纤维素、清漆和模塑粉；也可制造乙酸丁酸纤维素。丁酸与多种树脂混溶，可用于配漆、抽丝、与棉混纺。丁酸与低级醇形成酯，广泛用于香料工业，例如丁酸甲酯似苹果香，乙酯似菠萝香，异戊酯似梨香。三丁酸甘油酯可作纤维素塑料的增塑剂。
