桃桃Prunuspersica;peach蔷薇科李属落叶小乔木。较重要的变种有:油桃、蟠桃、寿星桃、碧桃。其中油桃和蟠桃都作果树栽培,寿星桃和碧桃主要供观赏,寿星桃还可作桃的矮化砧。树高4~5米。一年生枝条红褐色。叶多呈披针形,叶缘有锯齿,叶柄基部常生蜜腺。花型有蔷薇型和铃型两种。核果除蟠桃外,多为圆形或长圆形,果面除油桃外,均布有茸毛。果肉白、黄色或夹红晕,少数呈红色;肉质柔软、脆硬或密韧;核表面具不同沟点纹路,均为种和品种群的重要分类依据。桃桃在全世界有3000多个品种。中国约有品种800个,依其地理分布并结合生物学特性和形态特征,可分为5个品种群:①北方品种群。主要分布于黄河流域、青海、宁夏等地。②南方品种群。分布于长江流域及江浙地区。③黄肉品种群。原分布于西北和西南一带,现以沿海地区较多。④蟠桃品种群。以江苏、浙江一带栽培较多。⑤油桃品种群。分布于新疆、甘肃一带。性喜光,抗寒性较弱。适宜于干燥气候,雨量过多引起枝叶徒长,落果加重,品质下降,并易致病流胶。适宜中性偏酸排水良好的砂质土壤。一般用嫁接繁殖。其砧木在中国南方用毛桃,北方用山桃。也有用本砧或李、梅、杏、毛樱桃等作砧木的。常见的整形方式为自然开心形,以适应其喜光特性。修剪方法根据品种、树龄、环境条件等而定。观赏用碧桃的繁殖栽培管理大体与果实用桃树相似。病害有桃缩叶病、炭疽病、流胶病等;害虫有红颈天牛、蚜虫等。中国南方多采用套袋方法防治。桃的果实营养丰富,肉嫩多汁,风味鲜美而具芳香。除鲜食外,可加工成果脯、果干、果酱、果汁、糖水罐头或速冻桃片等。还可入药。
