β-紫罗兰酮 又名β-芷香酮、β-环柠檬叉丙酮。学名4-(2,6,6-E三甲基-1-环己烯-l-基)-3-丁烯-2-酮。无色至淡黄色液体。分子量192.30。密度0.95g/cm3。沸点239℃。闪点115℃。微溶于水。溶于油和醇。以1:3溶于70%乙醇。具有特有的类似紫罗兰、柏木、复盆子的香气,比α-紫罗兰酮有更显著的水果香和木香香气。 生产方法:主要采用缩合法。以柠檬醛和丙酮为原料,在氢氧化钠溶液中进行缩合反应,经醋酸中和后得到假性紫罗兰酮,再在硫酸介质中进行环化,最后经碱中和、蒸馏而得。 用途:酮类合成香料。主要用作紫罗兰、金合欢、桂花、兰花等花香型香精的香基。广泛用于口红、香皂。维生素A等的合成原料。
