伞形科伞形科Umbelliferae双子叶植物纲蔷薇亚纲的一个较大的科。一年生至多年生草本,根通常直生,呈圆锥形,少数呈块状、球状或为成束的须根。茎直立或匍匐上升,通常为圆柱形,一般髓部充实,有时中空。叶互生,叶柄的基部具叶鞘,边缘通常为膜质;叶片通常分裂,为1回掌状分裂或1~4回羽状分裂的复叶,有时为1~2回三出式羽状分裂的复叶,很少为单叶。花两性或杂性,呈顶生或兼有侧生的复伞形花序或单伞形花序,少数为头状花序。伞形花序有伞辐数条至数十条,基部有总苞片,全缘或齿裂,很少羽状分裂;小伞形花序基部通常有小总苞数片至十多片,全缘或很少羽状分裂;花萼与子房贴生,萼齿5或无;花瓣5,基部狭窄,有时成爪或内卷成小囊、顶端钝圆或有内折的小舌片;雄蕊5,与花瓣互生。子房下位;2室,顶部有盘状或短圆锥状的花柱基。果为2个分生果又称双悬果。该科约270属2800种。广布于北温带至热带和亚热带高山地区。中国约95属580余种,产全国各地,以西部为最多。该科不少种类是中国传统的中药材,如当归、川芎、独活、柴胡、前胡、北沙参、明党参、羌活、阿魏等,伞形科植物的主要化学成分有香豆素类、精油和精油生源相关的非挥发性成分、聚乙炔类、黄酮类、苯丙烷类及苯乙烯类、酚及酚类、三萜皂苷、生物碱等类化合物。这些成分具有多种生理活性,可用以治疗某些疾病,其中部分已获得初步疗效和成果。某些种类有食用价值,为常见栽培的蔬菜,如芹菜、芫荽、胡萝卜、欧芹等。有的供做食品香料或工业用香料,如茴香、莳萝等。有的可做饲料,如欧防风。还有一些属于有毒植物,如毒参、毒芹等。1898年,O.德鲁德综合了前人的研究成果,将伞形科分为天胡荽亚科、变豆菜亚科和芹亚科3个科。这个系统仍为世界学者广泛应用。伞形科与五加科的关系最为密切。当归茴香
