甜菜红分子式:CAS号:性质:天然食用色素的一种红紫色着色剂。由红色的甜菜花青素(betacyanines)和黄色的甜菜黄素(betaxanthines)组成。主要成分为甜菜花青素的甜菜苷(betanine),约占75%~95%。红到红紫色的液体、糊状物、块或粉末。易溶于水。在中性至酸性条件下呈稳定红紫色。耐热性差。通常由新鲜红甜菜或干制片状、粉状红甜菜,用水抽提、精制、浓缩或进一步喷雾干燥制得。也可将抽提液经离子交换树脂处理后,冷冻干燥,得纯甜菜苷结晶。是较安全的天然色素,广泛用于各种食品的着色,但不适用于高温处理食品和高水分活性食品。
