唾液  由三对大唾液腺(下颌腺、肋腺和舌下腺)分泌的液体和口腔壁上许多小粘液腺分泌的粘液,在口腔里混合而成的消化液。唾液无色无味,PH为6.6~7.1。正常人每日分泌量约为1.0~1.5升(牛、羊等食草动物,每天唾液分泌量多达体重的1/3)。人的唾液中99%是水,有机物主要是唾液淀粉酶、粘多糖、粘蛋白及溶菌酶等,无机物有钠、钾、钙、氯和硫氰离子等。唾液的成分随动物种类不同而民间,人和一些哺乳动物(兔、鼠等)唾液中含淀粉酶,而狗、猫和马等唾液中几乎无此酶。人的唾液与食物混和能溶解食物中的可溶性成分,使之作用天味蕾而引起味觉。唾液可防止口腔干燥,润滑食物;还可清洁口腔,冲洗残留在口腔里的食物残屑。当有害物质进入口腔时,唾液可起冲淡和中和作用,并将它们从口腔粘膜上洗掉。唾液使口腔湿润,便于说话,在食物还未与胃酸混和前,胃内食糜中的唾液淀粉酶可使食物中的淀粉分解为麦芽糖。唾液中的溶菌酶和硫氰离子具有杀菌作用,粘蛋白不仅有润滑作用,进入胃后,还可中和胃酸,并在胃酸作用下,附着于粘膜上,对抗胃酸对胃粘膜的腐蚀。唾液还有排泄作用,如体内有些物质及一些病毒,如碘化钾、铅、汞、狂犬病及脊髓灰质炎的病菌和艾滋病毒等都可经唾液排泄或传播。当腮腺受腮腺炎病毒感染可引起腮腺炎(痄腮),患者腮腺肿胀、疼痛,唾液分泌减少。此病有传染性,主要由患者唾液飞沫传播。某些鸟类的唾液腺很发达,它们以唾液将海藻粘合而造巢,如金丝燕所筑的巢,就是中国著名的滋补品“燕窝”。
