发酵单胞菌属分子式:CAS号:性质:一属氧化酶阴性、过氧化氢酶阳性、化能异养的革兰氏阴性细菌。细胞大小为(1.0~1.4)μm×(2.0~6.0) μm,两端钝圆,不运动或有1~4根极生鞭毛运动。专性厌氧或兼性好氧。葡萄糖或果糖可经ED途径生成乙醇、二氧化碳、乳酸和少量乙醛、甘油等产物,耐5%以上乙醇。各种菌株都需生物素和泛酸。不还原硝酸盐。多数菌株都可生长在pH值4或更低的酸度下。在葡萄糖-酵母膏琼脂上长出光滑、白色至奶油色、直径1~2mm的菌落。可从美洲龙舌兰发酵的龙舌兰酒或中爪哇的古木提棕榈发酵液中分离。也存在于苹果酒等酒精饮料中并使其变质。G+C mol%值为47.5~49.5。惟一模式种为运动发酵单胞菌(Z. mobilis)。近年来正在开发此菌生产酒精,它在发酵温度、代谢速率和产物转化率等方面都比传统的酵母酒精发酵更优越。
