羟基丙酮分子式：C3H6O2分子量：74.08CAS号：116-09-6性质：无色液体。凝固点-17℃，沸点145-146℃，96-97℃（20kPa）。溶于水、乙醇、乙醚。存在于啤酒、烟草、蜂密中。该品不稳定，可加甲醇使基稳定。制备方法：取氢氧化钾、无水甲醇及甲酸乙酯一起回流2h，制成甲酸钾的甲醇溶液。将其与溴丙酮加热回流，反应16h，反应毕冷却至0℃，滤除溴化钾，取滤液蒸馏，收集40-43℃（1.6kPa）馏分，得羟基丙酮，收率54-58%。用途：有机合成中间体。
