糖基化作用分子式:CAS号:性质:又称糖苷化作用。单糖的半缩醛羟基与醇或酚的羟基反应,失水而形成缩醛或衍生物(通称糖苷)的反应。糖苷的非糖部分叫配糖体。如果配糖体也是糖,那就形成双糖、叁糖或多糖,如乳糖、棉子糖、淀粉等。配糖体还可以是嘌呤、嘧啶、蛋白质等,可形成核苷、脱氧核苷、糖蛋白等在生物学上具有重要意义的物质。由于单糖有α-与β-型之分,生成的糖苷也有α-与β-两种型式。
