环糊精  一种呈环状的低聚葡萄糖。在通常情况下,环糊精是由6、7或8个葡萄糖单元通过α,1→4键环状相互连接的结晶体,分别称α-、β-或γ-环糊精。    环糊精分子呈环状,不具有还原性末端,对酸有一定的稳定性,普通的淀粉酶难于将它们水解。各种环糊精与碘的颜色反应不同,比旋光度和溶解度也各不相同,其中β-环糊精的溶解度最小,具有易结晶、易分离的特性。各种环糊精的性质见表。           环糊精能与多种有机和无机化合物形成分子络合物,称为包含化合物,并能改变被络合化合物的物理和化学性状。环糊精也是一类表面活性剂和相转移催化剂,能选择性地进行某些有机反应;根据离子半径的大小,能选择性地络合阳离子,在分析化学、医药、食品等行业中应用。
