干制香椿采集香椿在长成木质前都可采来加工,农历3月至4月上旬最为适时,此时的香椿形体丰满,肉质鲜嫩,色香浓郁,营养丰富。采集时将香椿蔸摘下或用镰刀割下即可,要尽量保持蔸体的完整。采后要用湿布遮盖,以防干瘪萎缩。当天运回当天加工,最好不超过10小时。沸烫将香椿蔸基部的短小硬皮拣去,并一批一批置于100℃沸水中浸烫3分钟。一次下的料与水体积之比为1:2,太多不便于操作,要上下翻动几次,见香椿软化就捞出,再立即放在4℃的冷水中快速过一下,以保证香椿的色质。干制将烫漂的香椿滤干,薄薄摊开置于阳光下翻晒。也可用炉火烘烤。并要防灰尘、杂质污染有条件的,最好用甩水机对香椿料进行离心甩水,随即采用冷冻升华真空干燥工艺,以稳定香椿的最佳色泽及香味。自然条件常规干制的,只要干制得好,也有同样的保质效果。干香椿的含水量以不易碎为度。包装将干制好的香椿进行分级包装,要用加厚的食品塑料袋进行冷冻真空密封包装(也可用常规方法、自然条件下包装),之后贮藏在阴凉、干燥处,待售。只要干制得好,贮藏1-2年不会变质。食用时用温水浸泡2小时左右即可恢复原色原状。
