球茎(corm)  球茎(corm) 由地下茎先端肥大而形成的球状变态茎。芽多数集中于顶端,有明显的节和节间,节上着生有腋芽和退化的膜质鳞叶。芋、荸荠、慈姑、魔芋等蔬菜的食用器官都是球茎。 芋的球茎约由20多个节组成,节上着生的退化叶鞘覆盖着球茎,每节上都有一个芽,按2/5的叶序在球茎上螺旋状排列。荸荠和慈姑的球茎着生在匍匐茎的先端。魔芋球茎上部没有明显的节,只在基部有几点较明显的节痕,但每节有一个肥大而突起的芽。这几种蔬菜都是单子叶植物,其球茎都具有单子叶植物茎的结构,有限外韧维管束,中柱不整齐。 球茎也是繁殖器官。播种后从球茎顶芽萌发到新球茎形成都要经过幼苗、茎叶生长、新球茎形成和球茎膨大四个时期。较高的温度,较强的光照和丰富的氮素营养有利于地上部的茎叶生长;较低的温度特别是较低的夜温,丰富的磷、钾营养有利于球茎的形成和膨大。短日照能促进球茎的形成,但对短日照的敏感性因种类和品种的不同存在着较大的差异。
