卡拉胶  一种硫酸酯化的半乳聚糖。其基本重复单元由1,3键合的β-D-吡喃型半乳糖基和1,4键合的α-D-半乳糖基组成:  分子量从十几万至几十万。其结构和组成随来源不同而异,主要区别在于3,6-脱水-D-半乳糖的含量和硫酸酯基的含量和位置不同。卡拉胶的词源来自爱尔兰的海滨城镇卡拉金。卡拉胶存在于许多种红藻类,如角叉菜、麒麟菜、杉藻、沙菜和银杏藻等的细胞壁中。    制备方法  用热水提取,然后用乙醇、异丙醇或丙酮等有机溶剂进行沉淀或冷冻脱水,再经干燥而得。为改善产品的性能,可用碱或石灰处理,脱去部分硫酸酯基,以增加3,6-脱水-D-半乳糖的含量。    性质  卡拉胶为白色或淡黄色胶片或纤维状物质;不溶于有机溶剂而溶于热水,某些结构类型的卡拉胶可以溶于冷水。它的胶凝能力较弱,但大多数碱金属盐、碱土金属盐和铵盐等能提高其胶凝能力。它与蛋白质反应生成配合物;与酸作用发生降解。    应用  卡拉胶可用作食品、医药和化妆品的胶粘剂、增稠剂、乳化剂和稳定剂,以及细菌培养基、治胃溃疡的药剂、抗血凝剂、降血脂剂和缓泻剂等。还可用作感光乳剂和感光乳剂层的抗静电剂,以及固定化酶载体和细菌的包埋材料。
