卵磷脂*分子式:暂无分子量:暂无CAS号:8002-43-5性质:卵磷脂可从蛋黄、家禽脑干、新鲜羊脑、酵母提取,但随着大豆制油工业的发展,现在几乎都成了大豆类卵磷脂。大豆卵磷脂为淡黄色至褐色的透明或半透明的粘稠状物质。溶于醇、醚、苯氯仿及轻石油,难溶于丙酮,不溶于水,在水中膨胀而成胶体溶液。粉末或糊状的卵磷脂,性质稳定,是卵磷脂、脑磷脂、肌醇磷肌等的混合物。磷脂在蛋黄中约含10%,大豆油约含2-3%。制备方法:1.从羊脑提取的方法 取新鲜脑,用绞内机绞碎。在冷处用工业丙酮浸渍三次,每次24h,经常搅拌。每次浸渍后都用线布、竹箩过滤,最后一次滤渣装入布袋内,用榨机压榨。滤液用于生产胆固醇。滤渣挥发去丙酮,在冷处用乙醚浸渍三次,每次24h。乙醚溶解液过滤,将滤液合并,在蒸馏器内加收乙醚。列留部分溶解于95%的乙醇,溶解的加热,然后冷却沉淀 。脑磷脂沉在底部,胆固醇浮在上面成一层薄膜,卵磷脂则溶于乙醇中。将卵磷脂乙醇溶液蒸馏回收乙醇,浓缩液缓缓倒入丙酮中,析出沉淀,过滤,用丙酮洗涤,加热除去丙酮、乙醇、真空干燥即得卵磷磷脂。2.从大豆中提取 大豆中大部分的含磷化合物是植酸钙镁,构成植钙镁的主体是植酸。但磷脂也是大豆中含量相当多的有机磷化合,是脂肪酸甘油酯中结合有磷和胺类的物质,有卵磷脂、脑磷脂等。由大豆制取大豆油进,将分离豆油所得的较质,用真空干燥机脱水后,再加入25-35%的植物油,就得到呈糖稀状的卵磷脂市售品。用途:大豆孵磷脂的最大用途是作食品添加剂,基次是作饲料添加剂。还用于医药、化妆品,以及皮革、沥青的乳化剂等。
